Spicy Tofu Fried Rice - RECIPES - AceNuwara - Nature's Finest Gifts


  • 1cup (504g) Firm Tofu (Cubed)
  • 1large pc (272g) Chicken Breast (Diced)
  • 1.3cups (245g) AceNuwara Red Basmathi Rice
  • 1large (164g) Red Capsicum (Chopped)
  • 2small (140g) Onions (Finely chopped)
  • 2tbsp (27g) Olive Oil
  • 8cloves (24g) Garlic (Finely chopped)
  • 4wedges (24g) Lemon Juice
  • 4tsp (24g) Light Soy Sauce
  • 1tbsp (10g) Shallots (Chopped)
  • 2tsp (9g) Brown Sugar
  • 1tbsp (6.8g) Paprika
  • 1tsp (5.2g) Mushroom Seasoning
  • 1tsp (2.4g) Black Pepper (Ground)
  • 1tsp (2.0g) Dried Red Pepper Flakes
  • 4tsp (2.0g) Dried Parsley Flakes
  • 0.5tsp (0.8g) Dried Cayenne Pepper Powder
  • 1dash (0.4g) Salt


Tofu Marinade

  • Strain off excess water and cut the tofu into cubes.
  • Combine the brown sugar and 2 tsp soy sauce together. Then coat the tofu evenly with the mixture.
  • Marinate the tofu overnight in the fridge.

Chicken Marinade

  • First, cut the chicken breast into small cubes.
  • Add the black pepper and salt. Mix well and set aside.

Fried Rice

  • Rinse, strain and cook the red basmati rice in a rice cooker. The ratio of water to rice should be 2:1. After cooking, leave the rice to cool for at least 10 minutes or overnight in the fridge.
  • Add 1 tbsp of olive oil in a pan and pan-fry the marinated tofu cubes and set aside.
  • Heat up the remaining olive oil in a pan/wok and sauté the shallots and onions till they turn light brown in colour. Then add in the garlic and fry.
  • Add in the chicken cubes and fry for a few minutes.
  • Add in the fried tofu, paprika, red pepper flakes, and cayenne pepper. Toss well and cook for 5 minutes.
  • Add in the cooked rice and lemon juice and mix well.
  • Add in the red capsicum, followed by the mushroom seasoning.
  • Drizzle in the remaining 2 tsp soy sauce over high heat and mix well.
  • Sprinkle dried parsley flakes over the rice and serve the dish hot.
