CHINESE FRIED RICE
Healthy and Low GI version of the famous Chinese Fried Rice created simply for you to enjoy without the guilt.

Ingredients
- 2medium pc (400g) Chicken Breast (Diced)
- 1.30cups (245g) Ace Nuwara Red Basmathic Rice
- 4small (152g) Eggs (Beaten)
- 2cups (99g) French Beans (Chopped)
- 1medium (62g) Celery (Stripped)
- 21slices (54g) Carrots (Stripped)
- 4tbsp (40g) Green Capsicum (Diced)
- 3tbsp (40g) Olive Oil
- 2small (7g) Spring Onion (Chopped)
- 0.3tsp (2g) Light Soy Sauce
- 0.3tsp (2g) Salt
- 0.25tsp (0.6g) White Pepper
Directions
- Rinse, strain and cook the red basmati rice in a rice cooker. The ratio of water to rice should be 2:1. After cooking, leave the rice to cool overnight in the fridge.
- Heat up ½ tsp of olive oil in a pan. Add chicken breast and stir fry till it is fully cooked. Place it on a bowl and set aside.
- Heat another ½ tsp of olive oil in a pan. Add the egg and stir fry till it is cooked. Place it along with the cooked chicken.
- Heat the rest of the olive oil in a pan/wok. Add all the vegetables except the spring onion.
- Add 4-5 tablespoons of water and cook for 5 minutes.
- Add the cooked rice and spring onion. Mix well for two minutes.
- Add the fried egg, cooked chicken, light soy sauce, salt and white pepper. Mix well for 2 minutes.
- Serve the dish hot.
